Vinification: | Gentle pressing, fermentation at controlled temperatures. The wine-juice, base for sparkling wine, is fermented in autoclaves according to the MARTINOTTI or Charmat method until we get the desired product after a period of about 100-120 days. |
Sensory Analysis: | Straw yellow color with bright highlights and a fine and persistent perlage. On the nose is an intense and pleasant, elegant bouquet with hints of white fruit and peach. Balanced taste, well supported by acidity, with a persistent and aromatic aftertaste. The optimum temperature for being served is at 6/8 ° C. Ideal combination for seafood entrees. |
