Vinification: | Gentle pressing, fermentation at controlled temperatures. The wine-juice, base for sparkling wine, is fermented in autoclaves according to the MARTINOTTI or Charmat method until we get the desired product after a period of about 100-120 days. |
Sensory Analysis: | Straw yellow color with highlights tending to a glossy greenish. The nose is clean, floral and harmonious hints. It proposes a persistent taste, fruity notes and full body. Abundant foam and perlage with fine grain. The optimum temperature for being served is at 6/8 ° C. Perfect combination for seafood entrees. |
